Everyone is tired of zucchini right now. I got several bags for the freezer done today. Then my husband went out and found two more. I shredded the zuc two ways. I regular shredded it and I cheese grated it for a very fine grate to add to sauces. See the photos below. My food processor is not working correctly right now so I had to do it by hand. Fun, Fun. I saw this recipe for chocolate zucchini muffins and think I will give this a whirl soon. Here is another one for Pineapple Zucchini bread. Its a fun twist on the regular muffins and my family will eat it.
Overall I am very happy with my little lasagna garden system this year so far. I can't wait for the tomatoes to ripen so I can start to make spaghetti sauce. I will update some pictures soon.
